If you live in the South, you already know the midday struggle. By 12:00 PM, the heat is blistering and the absolute last thing you want to do is turn on the stove and heat up the house.
Lately, my favorite way to beat the heat has been skipping the stove. Instead, I grab my Digz garden snips and head straight out to the backyard. There is something incredibly satisfying about harvesting your lunch right from the vine.
My summer garden is thriving right now, and the stars of the show are the cherry tomatoes. I am currently growing a mix of Super Sweet 100, Sun Sugar, and Sweet Million. They are ripening and taste so much better than the ones from the grocery store.
To build the ultimate no-cook summer salad, I start with a fresh, crisp base harvested straight from the soil:
- Hearty Kale: Packed with nutrients and great texture.
- Crisp Lettuce: The ultimate cooling summer green.
- Fresh Basil: Fragrant, peppery, and the ultimate taste of summer.
The Two-Minute Dressing Trick
Because these ingredients are so fresh, they do not need a complicated recipe. To bring it all together, I start by massaging the kale with a drizzle of olive oil and a sprinkle of salt. This quick step softens the leaves and cuts any bitterness.
To finish it off, I toss in the tomatoes and lettuce, then add a generous drizzle of rich balsamic glaze. It is sweet, tangy, and takes less than two minutes to prep. Â I usually add some nuts and protein on top to complete the meal.
I usually pair this salad bowl with a crisp glass of ice-cold sun tea.  It’s the perfect summer lunch!Â
